Why Our Lamb?

Feeding our local community means so much to us and while we may not touch every single dinner plate or reach any grocery store shelves, we believe in providing the very best lamb to local families will carry more weight in building who we are and raising lamb that is nutrient rich, gives back to the land and affordable.

We are proud to say that our lamb is not only certified grass fed grass finished through American Grassfed Association but is also truly nutrient dense — while you may hear these terms thrown around we believe that having solid proof to show it means more then just the claim.

And to do so, we sent in samples of our lamb to Dr. Stephan Van Vliet of Utah State University’s Food Metabolomics Lab to be tested for phytonutrient and fatty acid levels. The results are laid out below along with the health benefits.

Utah State University Food Metabolomics Lab 2025

Total Omega 6 Omega 3 Ratio

Little O Ranch & Livestock's certified grass fed grass finished lamb has 47.8% lower levels then the average US pastured lamb benchmark, 51.8% lower levels then grass fed beef's benchmark and 85.1% lower levels then the grain fed beef benchmark - A lower Omega 6 to Omega 3 ration is associated with reduced inflammation and a lower risk of chronic diseases like heart disease and arthritis. Diets closer to a 1:1 or 2:1 ratio are considered more beneficial.

Hippuric Acid - Micrograms/100g

Little O Ranch & Livestock's certified grass fed grass finished lamb has 124.2% higher levels then the average US pastured lamb benchmark, 104.5% higher levels then grass fed beef's benchmark and 270.1% higher levels then the grain fed beef benchmark - Hippuric Acid is linked to the intake of polyphenol-rich plants and is associated with anti-inflammatory and antioxidant effects that may support cardiovascular health.

Percent Total Omega 3 Fatty Acid

Little O Ranch & Livestock's certified grass fed grass finished lamb has 63.5% higher levels then the average US pastured lamb benchmark, 32.8% higher levels then grass fed beef's benchmark and 249.3% higher levels then the grain fed beef benchmark - Omega 3 Fatty Acids are known to promote heart and brain health.
